Woke up to the sound of raindrops, albeit light raindrops, but raining nonetheless. John left around 5:30AM and I decided it was a perfect time to go back to sleep, now that I had the whole bed to myself. We have a king bed at home and the boat bed is a queen, so space is sometimes a competition. I digress. It is indeed POURING cats and dogs this morning along with big wind gusts causing the boat to swing rapidly and then it is abruptly halted by the taut anchor chain and a loud thud. It was very low tide when I got up at 8:30 and we are in only 15’ of water (25-30’ at high tide) with the tide flats just off our stern. With each wind gust and tight anchor chain stop, I was hoping we wouldn’t slip anchor since I was by myself. However, the holding is very good in here, a very sticky mud bottom. I am guessing we are augured in pretty deep at this point! John got back around 10:30 and reported that fishing was good out there, he saw lots of guide boats hauling in some fish. The rain didn’t let up all day and into the evening so it was a very lazy day on Esperança. I made a new recipe tonight with salmon which I highly recommend Sesame-Soy-Miso Glazed Salmon over Coconut Rice, from the Half Baked Harvest cookbook - it was so delicious – two thumbs up from John! Posted a copy of the recipe below. I am hoping to go fishing tomorrow, weather permitting!


Picture below is from the cookbook. Instead of a fillet I cut my salmon into chunks and did rice bowls. I would double the marinade so you have enough to drizzle over the rice and salmon before serving. I made with roasted cauliflower because that's all I had onboard.
